FREDERICKSBURG, TEXAS — Fredericksburg, a charming small town in central Texas, is the perfect destination for a trip in 2025. Fredericksburg recently opened its first full-service hotel along with several new restaurants that represent the area’s dedication to farm-to-table and its rich German history and heritage. These additions make now the ideal time to plan a visit and discover what’s new in the Texas Hill Country.

Fredericksburg is just over an hour from Austin and San Antonio and four hours from Houston or Dallas-Fort Worth for those wishing to explore the region.

Albert Hotel: A honest Hill Country Getaway

In January 2025, Fredericksburg welcomed its first full-service hotel. Albert Hotel is the first hotel to open since 2015. The property offers 105 thoughtfully designed rooms, including cozy bunk rooms to luxury suites as well as a private four-bedroom house. The Albert Suite is over 1,400 square feet and includes a living and dining space along with frontage to Historic Main Street.

Guests can relax and indulge at the full-service spa, which opened on January 10.

The hotel has multiple onsite dining options. Opening in March 2024, The Pharmacy serves fresh pastries, artisan sandwiches and desserts, locally-sourced coffee and gifts. Also opening in March 2024, The Saloon is a nod to the White Elephant Saloon that dates back to 1888, serving cold beer and Frostees. The Restaurant, a gourmet dining experience, opened in January 2025 and features seasonal menus and ingredients sourced from the area. The Restaurant is led by MICHELIN Star Chef and three-time James Beard finalist Michael Fojtasek. Junebugs, a barbecue restaurant, is slated to open in the spring of 2025.

The hotel is located at 213 E. Austin St. in downtown Fredericksburg and offers valet parking.

New and Notable Businesses

Fredericksburg has welcomed several new businesses in late 2024 and early 2025. Get a quick glimpse below.

  • Casa Chloe is an upscale Mexican restaurant located just one block from downtown Historic Main Street. The atmosphere includes handcrafted furnishings, vibrant artwork and a quiet patio. Menu items include fresh guacamole, Mole, Octopus, Enchiladas, Chile Relleno, tacos, flan, churros and Tres Leches. Casa Chloe is located at 209 E. San Antonio St.
     
  • The Traveler Collections: Located at 418 E. Main Street, this restaurant aims to bring together culinary excellence and artist immersion. Latin fusion menu items pair with expertly mixed handcrafted cocktails to become true expressions of art.
     
  • Fredericksburg Brunch Co. is a family-owned restaurant within the Nury's Hospitality Group. With over 30 years of experience, they focus on delivering exceptional dishes made from premium ingredients, alongside service that makes guests feel like family. The restaurant combines their rich heritage with a fresh, innovative approach to create an inviting, memorable experience. Fredericksburg Brunch Co. is located at 902 S. Adams St.
     
  • Blue Sage features 12 properties nestled in the Texas Hill Country. Each property features exceptional views of the Texas Hill Country, a small kitchen, dining and living areas, and a private deck. Each unit can sleep up to two guests. Two units are stair-free. Blue Sage is located at 7656 Ranch Road 965.
     
  • Halter Ranch Texas originated in Paso Robles, California and expanded to the Texas Hill Country. The winery is situated on 32 acres lined with oak trees , offering views of the rolling hill and beautiful wildflowers. Inside, large fireplaces offer a spot to relax and warm up in the winter, while large stone walls and shaded tress provide the perfect haven during warm summer months. Halter Ranch is one of the only wineries in the area to produce certified organic wines. The property has a fine-dining restaurant on site, Restaurant Hansjörg which pairs wines with local ingredients and inventive dishes. Halter Ranch is located at 8651 E. U.S. Highway 290.
     
  • Mesquite at the Warehouse is located in the historic Woerner Warehouse, which served as a local feed store for over 70 years. This restaurant is an upscale barbecue concept that puts the focus on fresh, local ingredients and scratch made sweets and breads. Mesquite at the Warehouse is located at 305 E. Lincoln St.  
     
  • Outdoorsy is a luxury glamping retreat located on 34 acres in the Texas Hill Country. Glamping canvas tents feature modern furnishings and panoramic views of the area. Outdoorsy is located just outside of Fredericksburg in Stonewall, at 300 Wilke Trail.  

Fredericksburg Food and Wine Fest Returns

                After being revamped in 2024, Fredericksburg Food and Wine Fest returns for another year of showcasing the best in Texas wine and food. A special preview week is set for July 21-26, 2025 and will include a street dinner, wine tastings, cooking classes, a Qüesoff an more.

                The main festival will again be held in downtown Fredericksburg at Marktplatz and is slated for October 26 but experiences will take place the week prior, beginning October 21. More information the festival and events can be found here.

                In addition to these new offerings, Fredericksburg remains a destination with a rich history, natural beauty and a wide variety of seasonal activities.

Take time to slow down and discover just how bigger and brighter the Texas stars are with stargazing at Enchanted Rock State Natural Area or Lyndon B. Johnson Municipal Park.
