Chef and Owner Ross Burtwell has created a unique port-of-call at his Cabernet Grill – Texas Wine Country Restaurant and Cotton Gin Lodging, located just a stone’s throw from the hustle and bustle of Fredericksburg’s iconic Main Street shopping district. Ross purchased the property in 2003 and set about to create a perfect Hill Country retreat. The lodging accommodations include a grouping of well-spaced, cozy log cabins set in a village atmosphere complete with the soothing sounds of a waterfall emptying into a restive fish pond. In the warmer months, guests can sip a relaxing glass of wine at one of the bistro tables placed around the compound. For larger groups, there’s “The Big House,”a two-story,fully-equipped, farmhouse-style accommodation.
Using his considerable talents as a chef, Ross honed the menu at the on-site Cabernet Grill Restaurant into one of the best examples of the emerging “Hill Country Cuisine” in the region. Sourcing his ingredients locally from area farmers, ranchers, cheesemakers, seafood fresh from the Gulf Coast, and wild game purveyors, he has evolved a distinctive offering of well-executed and served dishes from seafood to fine aged steaks, game meats and birds, and poultry, with each dish complemented by the perfect combination of side dishes.
To make your Texas experience complete, Cabernet Grill features an all-Texas-label wine list. Ross selects from the best varietals and vintages that Texas has to offer. The list is designed so that there is a perfect wine to accompany each menu item. And the staff is knowledgeable in assisting diners with pairing a Texas wine with their menu selections. There’s even a menu of signature cocktails prepared using Texas-distilled spirits! Ross’s efforts have earned a spot as one of the “Top Ten Restaurants in the Nation” on travel giant Tripadvisor’s website.
